Ingredients
6 medium carrots
1 stalk lemongrass
1% salt (by weight of prepared carrots)
1/2 tsp freshly ground white pepper
50 g butter
Procedure
Peel the carrots
Slice into 5 mm slices
Cut the lemongrass into 10 cm lengths & crush each stalk
Place into a Sous Vide bag with the carrots, salt, pepper & butter
